The other day I acquired 2 bags full of beets. Beets are not really a favorite in my family, but food is food and who is to complain when it’s free I knew you could sauté them, pickle them or shave them over a salad but I decided why don’t I mash it up like a potato and mix some apples with it. It actually turned out pretty tasty. And I don’t know about you but I have a picky toddler and even he loved it.
This recipe is super easy to make and it’s great to stick in some ice cubes and toss into a smoothie, or put in reusable food pouch or eaten with some yogurt. It’s such a simple easy way to get your toddler to eat there veggies. Let’s get the beets rolling…I mean boiling! Enjoy!
Ingredients:
- 4-5 Beets
- 1/2 small container of applesauce (3-4 Apples)
- 1-2 cups vanilla yogurt
- 1/2- 3/4 cup sugar
- Pot
- Water
- Pinch of Cinnamon
Directions:
- Wash, skin, and chop beets into *cubes
- *Cook beets till soft
- Drain all but 1-2 cups of liquid
- Add applesauce, and cooked beets to a blender
- Add sugar and cinnamon
- Blend until smooth
- Use in smoothies, freeze for baby food, or eat plain.
My kiddo who is picky loves it with plain yogurt.
